Seminar sequence:
- Preparing, working and shaping 60 kg of dough into 12 different kinds of bread according to specially developed recipes
- In addition to sourdough, scald, soaker and mash will be freely used
- Explanation of various fermentation processes for baking
- Both short and long proofing of the dough for great taste and good keeping
- Introduction to the secret of sourdoughs and how to make them
